
On the road to Vientiane, the capital city, makeshift stalls can be encoutered along the road, selling all kind of products but mainly dried fish. People learned to preserve fish by fermenting it into fish sauce (called padek) or drying it. In Laos, people sometimes catch a lot of fish at one time, mostly during the rainy season, between May and October.
